    Grilled russet potatoes

    These delectable grilled potatoes can be prepared on an indoor grill, outdoor grill, or even over a campfire. They serve as a delightful side dish to complement any meal.

    Ingredients:

    • 4 large russet potatoes
    • Olive oil
    • Seasoning salt
    • Freshly ground black pepper
    • Garlic powder
    • Onion powder
    • Aluminum foil (optional)

    Instructions:

    Scrub the potatoes clean under running water. Pat them dry with a paper towel.

    Cut the potatoes into 1/2-inch-thick slices. Then parboil the potatoes for about 15 minutes in a pan of water. Drain the water off.

    Drizzle olive oil over the potatoes, making sure to get it in between the slices. Sprinkle seasoning salt, freshly ground black pepper, garlic powder, and onion powder on top.

    At this point, you can wrap individual servings of the potatoes in aluminum foil. I didn't do this to mine because I wanted the potato slices to have the grilled marks.

    Place the sliced potatoes on a preheated grill over medium heat. Cook for about 30 minutes, turning occasionally, until the potatoes are crunchy on the outside and completely fork tender on the inside.

    When cooking potatoes over a campfire, there are several methods you can use to achieve delicious results. One option is to place a rack over the fire and nestle heavy pots, such as a cast-iron Dutch oven, into the embers. Another technique is to wrap sliced potatoes in foil and tuck them into the coals to bake. These methods allow for a unique and flavorful cooking experience that is sure to impress your fellow campers.

    Serve the potatoes hot off the grill. Enjoy!
