Delicious Stewed Beef and Gravy in a Mashed Potato Ring

Enjoy the mouth-watering taste of my delicious stewed beef and rich gravy tucked within a fluffy mashed potato ring. This delectably rich and hearty dish is sure to please, with its perfect blend of savory flavors and comforting textures in every bite.

    Ingredients:

    • 1 pound of stewing beef
    • 1 onion, chopped
    • 2 cloves of garlic, minced
    • 1/4 cup of cooked, sliced carrots
    • 1 cup of beef broth
    • 1 tablespoon of Worcestershire sauce
    • 1 teaspoon of thyme
    • Seasoning salt and freshly ground black pepper, to taste

Ingredients to make the mashed potato ring:

    • 4 cups of mashed potatoes (you'll need about 6 large potatoes to equal 4 cups of mashed potatoes).
    • Water
    • Butter (optional)
    • 1/2 teaspoon of kosher salt
    • Freshly ground black pepper, to taste
    • 1/4 cup of butter
    • 1/4 cup of evaporated milk

    Instructions:

    1. Prepare the beef:

In a large pot, brown the stewing beef over medium heat. Add the chopped onion and garlic and cook until they are translucent.

    2. Add the flavors:

Pour in the beef broth, Worcestershire sauce, thyme, seasoning salt, and freshly ground black pepper. Let the mixture simmer for about 1 to 2 hours until the beef is tender. Add 1/4 cup of cooked, sliced carrots.

    3. Make the Mashed Potato Ring:

First, wash, peel, and cube 6 large potatoes. Place them in a large pot and add enough water to cover the potatoes. Cover the pot with a lid.

Allow the cubed potatoes to boil for 15 to 20 minutes, or until they become fork tender. Drain the water off.

Mash the potatoes using a potato masher. Add butter, if desired. Season the mashed potatoes with 1/2 teaspoon of kosher salt and freshly ground black pepper, to taste.

Mix the mashed potatoes with butter and milk. Press the mashed potatoes into a mold on a baking sheet and bake in a 350-degree oven for about 10 to 20 minutes.

    4. Assemble the Dish:

Once the mashed potato ring is ready, spoon the stewed beef and gravy into the center of the ring. Serve hot and enjoy!
