    Broccoli and Cheese Soup

    Ingredients:

    • 2 cups of broccoli florets
    • 1 small onion, chopped
    • 3 cloves of garlic, minced
    • 4 cups of chicken or vegetable broth
    • 1 cup of evaporated milk
    • 1 cup of shredded sharp cheddar cheese
    • 3 tablespoons of butter
    • Seasoning salt and freshly ground pepper to taste

    Instructions:

    In a large pot, melt the butter over medium heat.

    Add the chopped onion and garlic, and sauté until they are soft and translucent.

    Add the broccoli florets and cook for a few minutes until it starts to soften.

    Pour in the chicken or vegetable broth and bring the mixture to a rolling boil.

    Reduce the heat and let the soup simmer for about 15 to 20 minutes, or until the broccoli is fork tender.

    You have the option to use an immersion blender to achieve your desired consistency or leave the broccoli in coarse chunks for added texture.

    Stir in the evaporated milk and shredded sharp cheddar cheese until the cheese is melted and the soup is creamy.

    Season with seasoning salt and freshly ground black pepper to taste.
