    Roasted garlic and herb potatoes with skins on

    This budget-friendly recipe is simple to prepare and absolutely delicious. The potatoes are roasted in a nonstick skillet on the stovetop, so there's no oven time involved.

    Ingredients:

    • 4 large russet potatoes; you can also use Yukon gold or red potatoes.
    • 2 tablespoons of olive oil
    • 1 1/2 teaspoons of minced garlic
    • 1 teaspoon of red pepper flakes
    • 1/2 teaspoon of smoked paprika
    • 1/2 teaspoon of thyme
    • 1/2 teaspoon of seasoning salt
    • 1 teaspoon of freshly ground black pepper

    Instructions:

    Begin by rinsing the potatoes with fresh running water. Then coarsely slice them into chunks and place them in a bowl. 

    Season the potatoes with 1 1/2 teaspoons of minced garlic, 1 teaspoon of red pepper flakes, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of thyme, 1/2 teaspoon of seasoning salt, and 1 teaspoon of freshly ground black pepper. Toss the potatoes to make sure they are evenly coated with the spices.

    In a large nonstick skillet, add 2 tablespoons of olive oil. Allow the oil to get hot over medium heat. Then transfer the prepared potatoes to the pan and stir them around in the olive oil.

    Next, place a lid over the skillet. Allow the potatoes to cook for about 10 minutes, then stir and flip them over. Place the lid back over the pan and continue to cook for another 10 to 15 minutes before stirring again. Add additional olive oil only if needed. Then continue cooking for an additional 10 to 15 minutes or until your potatoes are fork-tender. Adjust the temperature setting as needed.

    My 3 year old grandson loves home fries. I make them all the time with just a little oil, garlic powder, parsley flakes, salt, and pepper.
