A Little Background on Broccoli Cheddar Soup

Broccoli Cheddar Soup is a classic that has warmed hearts for generations, often found in cozy diners and beloved family kitchens. The addition of potatoes makes this version even heartier, offering a delightful creaminess that pairs beautifully with the sharpness of cheddar cheese. This recipe allows you to set it and forget it, letting the crockpot do all the work while you get on with your day. It’s ideal for those who crave rich, savory flavors without spending hours in the kitchen.

    Ingredients List:

    • 1 lb potatoes, peeled and diced
    • 4 cups broccoli florets
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 4 cups vegetable broth
    • 1 cup heavy cream
    • 2 cups shredded cheddar cheese
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon paprika
    • 1 tablespoon olive oil

    Step-by-Step Directions:

    Prepare the Ingredients:
Begin by adding the diced potatoes, broccoli florets, diced onion, and minced garlic into your crockpot. The potatoes give the soup a rich, creamy base, while the broccoli adds a fresh, vibrant flavor.

    Add the Broth:
Pour in the vegetable broth over the vegetables and give everything a good stir. Season the mix with salt, black pepper, and paprika to add a subtle warmth and depth to the flavor.

    Cook:
Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. You’ll know it’s ready when the potatoes are fork-tender, blending easily into the soup.

    Blend the Soup:
Once cooked, use an immersion blender directly in the crockpot to puree the soup until it reaches your desired texture. I like to leave a few chunks for a bit of bite, but you can blend it smooth if you prefer. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches. Just be sure to let it cool slightly to avoid splashes!

    Add Cream and Cheese:
Stir in the heavy cream and shredded cheddar cheese. Continue stirring until the cheese is fully melted and the soup has a velvety, creamy consistency. Taste and adjust the seasoning as needed—sometimes a pinch more salt or paprika can really bring out the flavors.

    Serve:
Ladle your Crockpot Potato Broccoli Cheddar Soup into bowls, and enjoy it while it’s warm! It pairs wonderfully with a slice of crusty bread or a side salad for a complete meal. This soup is perfect for those chilly evenings when all you want is something comforting and satisfying.

    Pro Tips:

    • For a lighter option: Swap the heavy cream with half-and-half or milk. It will still be creamy, but with fewer calories.
    • Want some extra protein? Add cooked bacon crumbles or diced ham during the last hour of cooking for a smoky, savory twist.
    • Extra veggies: Carrots and celery can add extra depth to the soup—just dice them and add in with the other vegetables.
