    These Chicken Kabobs are so good and easy, the lemon really brightens up the flavor profile! No grill? Check out the tips below the recipe for cooking them in the oven



    Easy Lemon Dill Chicken Kabobs


    Ingredients:

    • For the Marinade:
      • 1/4 cup olive oil
      • Juice of 2 lemons
      • 3 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
      • 3 garlic cloves, minced
      • 1 teaspoon salt
      • 1/2 teaspoon black pepper
      • 1 teaspoon honey or sugar (optional, for a touch of sweetness)
    • For the Kabobs:
      • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
      • 1 large red bell pepper, cut into 1-inch pieces
      • 1 large yellow bell pepper, cut into 1-inch pieces
      • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

    Instructions:

    1. Prepare the Marinade:
      • In a medium bowl, whisk together the olive oil, lemon juice, chopped dill, minced garlic, salt, pepper, and honey (if using).
    2. Marinate the Chicken:
      • Place the chicken cubes in a large resealable plastic bag or a shallow dish.
      • Pour the marinade over the chicken, ensuring all pieces are well-coated.
      • Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
    3. Assemble the Kabobs:
      • Preheat the grill to medium-high heat.
      • Thread the marinated chicken cubes, red bell pepper pieces, and yellow bell pepper pieces onto the skewers, alternating between chicken and bell peppers.
    4. Grill the Kabobs:
      • Lightly oil the grill grates to prevent sticking.
      • Place the kabobs on the preheated grill.
      • Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
    5. Serve:
      • Remove the kabobs from the grill and let them rest for a few minutes.
      • Serve the kabobs hot with your favorite side dishes, such as rice, salad, or pita bread.

    Tip:

    • Oven Method: If you don’t have a grill, you can cook the kabobs in the oven. Preheat the oven to 400°F and bake the kabobs on a baking sheet for about 20-25 minutes, turning halfway through.
