    This is one of our favorite meals, meatloaf, steamed vegetables, and my husbands special mashed potatoes.


    Frankie's Mashed Potatoes


    Ingredients:

    • 2 pounds potatoes (Yukon Gold or Russet work well)
    • Salt (for boiling and seasoning)
    • 4 tablespoons unsalted butter
    • 1/4 to 1/2 cup tangy salad dressing (we like Great Value Whipped Salad Dressing)
    • Freshly ground black pepper, to taste

    Instructions:

    1. Prepare the Potatoes:
      • Peel the potatoes and cut them into evenly sized chunks. This helps ensure they cook evenly.
      • Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water.
    2. Boil the Potatoes:
      • Bring the water to a boil over high heat. Once boiling, reduce the heat to a simmer and cook the potatoes until they are tender and easily pierced with a fork, about 15-20 minutes.
    3. Drain and Dry:
      • Drain the potatoes in a colander and return them to the pot. Place the pot back on the stove over low heat for a minute or so, shaking the pot occasionally to help evaporate any remaining water. This step helps ensure your mashed potatoes are light and fluffy.
    4. Mash the Potatoes:
      • Add the butter to the potatoes and begin mashing them with a potato masher or blend with a handheld electric mixer.
      • Gradually add the tangy salad dressing, starting with 1/4 cup and adding more as needed to reach your desired creaminess and flavor. Continue mashing until smooth.
    5. Season and Serve:
      • Season the mashed potatoes with salt and freshly ground black pepper to taste. Stir well to combine.
      • Serve hot, garnished with additional butter or chopped fresh herbs if desired.
