    This is a simple Asian-inspired fried rice and a great way to used leftover rice. Goes great with chicken, shrimp, or vegetable stir-fry.


    Simple Asian-Inspired Fried Rice


    Ingredients:

    For the Rice:

    • 3 cups cold, cooked rice (preferably day-old)
    • 2 tablespoons vegetable oil
    • 3 cloves garlic, minced
    • 1 small onion, finely chopped
    • 2 eggs, beaten
    • 2 tablespoons soy sauce
    • 1 teaspoon sesame oil
    • Salt and pepper, to taste

    For Garnish:

    • 2 green onions, sliced
    • Fresh cilantro, chopped (optional)
    • Sesame seeds (optional)

    Instructions:

    1. Prepare the Rice:
      • Ensure your rice is cold and separated. If using freshly cooked rice, spread it out on a baking sheet and let it cool.
    2. Cook the Eggs:
      • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
      • Pour in the beaten eggs and scramble until fully cooked. Remove and set aside.
    3. Sauté Aromatics:
      • Add the remaining vegetable oil to the skillet. Once hot, add the garlic and onion, sautéing until fragrant and translucent.
    4. Add the Rice:
      • Add the cold rice to the skillet, breaking up any clumps. Stir-fry the rice, ensuring it is heated through and begins to develop a slight crisp.
    5. Season the Fried Rice:
      • Stir in the soy sauce and sesame oil, mixing well to coat the rice evenly. Taste and adjust seasoning with salt and pepper if necessary.
    6. Combine and Finish:
      • Return the scrambled eggs to the skillet, breaking them into small pieces and mixing them into the rice.
    7. Garnish and Serve:
      • Remove from heat and transfer the rice to a serving dish.
      • Garnish with sliced green onions, fresh cilantro, and sesame seeds (if using).

    Tips:

    • Cold, day-old rice is ideal for fried rice to ensure it remains separate and fluffy.
    • Garnish after cooking: Adding green onions, cilantro, and sesame seeds as garnish gives a fresh and vibrant finish to the dish.
