    This Spicy Pinto Beans recipe is a twist on our favorite classic, adding smoky bacon and a kick of spices for extra flavor. It's an easy, hearty dish perfect with rice or cornbread. Enjoy!

    Spicy Pinto Beans


    Ingredients:

    • 1 pound dry pinto beans
    • 4 slices bacon, chopped
    • 1 large onion, chopped
    • 1 bell pepper, chopped (red or green)
    • 1 tablespoon chili powder (preferably dark for more intensity)
    • 1/2 teaspoon cayenne pepper (adjust to taste for desired heat level)
    • 1 teaspoon cumin
    • 1 teaspoon garlic powder
    • 1 teaspoon salt (adjust to taste)
    • 1/2 teaspoon black pepper
    • Water (up to the max fill line of the Instant Pot)

    Instructions:

    1. Prepare the Beans:
      • Sort through the pinto beans, picking out any rocks or bad beans.
      • Rinse the beans thoroughly under cold water.
    2. Add All Ingredients:
      • Add the rinsed pinto beans, chopped bacon, onion, bell pepper, chili powder, cayenne pepper, cumin, garlic powder, salt, and black pepper to the Instant Pot.
      • Add water up to the max fill line of the Instant Pot.
    3. Cook the Beans:
      • Close the lid and set the valve to the sealing position.
      • Cook on high pressure for 2 hours.
      • Allow the pressure to release naturally.
    4. Finish and Serve:
      • Once the pressure has fully released, open the lid and stir the beans.
      • Taste and adjust seasoning if needed.
