    Craving tacos but want something a bit different? This Chicken Taco Bowl has all the delicious flavors you love, served in a hearty and customizable bowl. It’s an easy way to enjoy a taco-inspired meal that's fresh, filling, and perfect for any day of the week.


    Easy Chicken Taco Bowl Recipe

    Ingredients:

    • 1 cup white rice (or your choice of rice)
    • 2 chicken breasts, cut into strips
    • 1 medium onion, cut into strips
    • 1 packet taco seasoning (or homemade taco spice blend)
    • 1 can black beans, drained and rinsed
    • 1 cup whole kernel corn (canned, frozen, or fresh)
    • 1 cup fresh pico de gallo
    • 1 cup shredded lettuce
    • ¼ cup chopped fresh cilantro
    • ½ cup shredded cheese (cheddar, Monterey Jack, or your favorite)
    • 1 avocado, diced
    • 1 tablespoon olive oil
    • Salt and pepper to taste

    Instructions:

    1. Cook the Rice:
      • Cook the rice according to the package instructions. Once done, fluff with a fork and set aside.
    2. Prepare the Chicken and Onions:
      • In a large pan, heat the olive oil over medium heat. Add the onion strips and sauté for 3-4 minutes until they start to soften.
      • Add the chicken strips to the pan with the onions. Season with the taco seasoning. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the onions are caramelized and tender. Remove from heat.
    3. Heat the Beans and Corn:
      • In the same pan or a separate small pot, heat the black beans and corn together until warmed through. You can season with a pinch of salt and pepper if desired.
    4. Assemble the Taco Bowl:
      • In serving bowls, start by adding a scoop of cooked rice.
      • Top with the seasoned chicken and onion mixture, black beans, and corn.
      • Add a spoonful of fresh pico de gallo, a handful of shredded lettuce, and some chopped cilantro.
      • Sprinkle shredded cheese over the top.
      • Finish with diced avocado.
    5. Serve and Enjoy:
      • You can stir everything together in the bowl or enjoy it as is. Serve with a wedge of lime on the side if desired.

    Tips:

    • Feel free to customize the toppings based on your preferences. Add sour cream, jalapeños, or hot sauce for extra flavor.
