    Savory Roasted Butternut Squash

    This savory roasted butternut squash is a perfect side dish for fall gatherings or family dinners. Roasted until tender and golden, the squash is seasoned simply with butter, salt, and herbs to highlight its natural flavor. You can also finish with a touch of pepper or herbs for a bright, earthy touch.

    Ingredients:

    • 1 large butternut squash
    • 2-3 tablespoons unsalted butter, softened (or olive oil for a vegan option)
    • 1/2 teaspoon salt (or to taste)
    • Freshly ground black pepper (optional)
    • 1 teaspoon fresh thyme or rosemary (optional)
    • Fresh parsley for garnish (optional)

    Instructions:

    1. Preheat the Oven:
      Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
    2. Prepare the Squash:
      Carefully cut the butternut squash in half lengthwise and scoop out the seeds and stringy pulp using a spoon.
    3. Season the Squash:
      Place the squash halves on the prepared baking sheet, cut side up. Spread 1 to 1.5 tablespoons of softened butter (or olive oil) over the flesh of each half. Sprinkle the squash with salt, and if desired, add a pinch of black pepper and a few sprigs of thyme or rosemary.
    4. Roast the Squash:
      Place the baking sheet in the preheated oven and roast for 45-60 minutes, depending on the size of the squash. Roast until the squash is tender and has golden, caramelized spots on the surface.
    5. Cube the Squash:
      Once roasted, remove the squash from the oven and allow it to cool slightly. Using a knife, cut the flesh into cubes while it’s still in the skin, then scoop out the cubes with a spoon into a serving dish.
    6. Serve:
      Transfer the cubed squash to a serving dish, drizzle any remaining butter or oil from the baking sheet over the top, and garnish with fresh parsley if desired. Serve warm.

    Optional Sweet Version:

    For a sweeter version, make the following adjustments:

    • Replace the herbs with 1-2 tablespoons of brown sugar.
    • After spreading butter over the squash, sprinkle the brown sugar evenly on top.
    • Optionally, add a pinch of ground cinnamon for extra warmth.

    Roast as instructed and enjoy the sweet caramelized flavor!
