HONOLULU (KHON2) — It’s a contemporary European bistro that began on Oahu’s North Shore. Now, it’s transformed into a celebration of everything about living and growing up in Hawaii.
Wake Up 2Day’s Chris Latronic went live from the brand new Mana + Pua location at SALT at Our Kakaako with all the fresh details with owner and partner, Ashleigh Corallo.
It all started with a collaboration between partners and besties Keaka and Ashleigh as they teamed up to open Mana + Pua.
The contemporary European bistro aims to create a casual food and drink environment in the heart of Honolulu.
“Oahu’s food and drink scene is all kind of hip savage with so many options to choose from. Our main goal: have a serious food and bar program in a very serious and unpretentious fashion. We want you to feel comfortable knowing your dining experience is in our hands and let us focus on efficient service, classic wines and cocktails and extremely fresh, local food. We are located on the second floor with an open floor plan, a fresh breeze and urban city views. Join us for pau hana, Sunday brunch, light fare at the bar or a special dinner in the bistro. A little something for everyone in your ohana,” explained Ashleigh Corallo, owner and partner.
Mana + Pua’s premier chef, Matt Vidusek also joined Wake Up 2Day to share his journey to the position.
From Navy nuclear engineer to culinary mastermind, Chef Matt is a testament to his adventurous spirit. After spending years ensuring the smooth operation of complex machinery, he craved a better creative outlet.
The precision he hones in the Navy found a new purpose at the prestigious Culinary Institute of America. Now, Chef Matt’s passion lies in transforming the freshest local ingredients into delectable dishes. His dedication to seasonal bounty extends beyond the kitchen.
Chef Matt fosters a welcoming atmosphere at Mana + Pua, ensuring every guest feels like part of the family.
He shared “The Scorched Tako” and a fresh mahimahi dish topped with a delectable papaya miso julienne salad. Then, we hopped into the kitchen where Chef Matt demonstrated some kitchen moves as he prepared their local-sourced venison and pork belly burger topped with smoked white cheddar on a brioche bun.
