    Buffalo Grille Joins Adair Concepts Family

    For 40 years, Houston’s beloved Buffalo Grille has been a culinary landmark, serving sunny-side-up memories in the cozy neighborhoods of West University and Memorial. Both the longstanding West U location at 4080 Bissonnet St and the newer outpost at 1301 S Voss Rd have now been acquired by Adair Concepts , an esteemed hospitality group known for its popular neighborhood restaurants.

    The Adair family, who grew up visiting Buffalo Grille’s Inner Loop flagship, is uniquely positioned to shepherd this local institution for future generations. Buffalo Grille aligns seamlessly with Adair Concepts’ portfolio, which includes Skeeter’s Mesquite Grill, Los Tios Mexican Restaurants, Adair Kitchen, Adair Downtown, Eloise Nichols, Bebidas, and Betsy’s at Evelyn’s Park. The group’s focus on casual yet high-quality neighborhood eateries that feel like a familiar living room makes Buffalo Grille a perfect addition.

    “We want Buffalo Grille to continue as it was; as it is – classic neighborhood spots, each with its own unique history and habits. Those are the things we want to preserve as we go forward,” said Adair Concepts President, Nick Adair. The new owners are excited to uphold the traditions that have made Buffalo Grille a cherished mainstay while making necessary yet subtle enhancements.

    In the spirit of maintaining the brand’s original charm, Adair Concepts plans to implement inconspicuous changes that respect Buffalo Grille’s heritage status. Minor design tweaks will enhance the interiors and exteriors of both locations, along with subtle upgrades to provisions like orange juice, farm-fresh eggs, and fresh produce. The beloved menu will remain unchanged, ensuring that favorites like hotcakes, biscuits and gravy, huevos rancheros, and egg scrambles continue to delight breakfast patrons, while burgers, quesadillas, catfish, chicken fried steak, loaded baked potatoes, and BLTs satisfy lunch and dinner cravings.

    The Bissonnet site presents a new opportunity for Adair Concepts: the addition of a bakery component. This kitchen will serve as a baking commissary to craft artisan breads, sandwich buns, and assorted pastries for both Buffalo Grille and other Adair restaurants. This enhancement underscores the company’s strategy to preserve the best of Buffalo Grille while making thoughtful, purpose-driven improvements.

    “As restaurants have become more thematic, we appreciate the unique cultural connection Buffalo Grille has to its fans,” said Adair Concepts Creative Director, Katie Barnhart. “We want to preserve everything about Buffalo Grille that has made it what it is for 40 years.”

    As Adair Concepts continues to expand, including a new Adair Kitchen location underway in San Antonio, Buffalo Grille’s incorporation into their esteemed portfolio promises to honor and elevate the dining experiences that generations of Houstonians have cherished.
