Peltier served in the initial invasion of Iraq in 2003 and also served in Afghanistan in 2005.“That’s kind of how I came up with my concept - food service and jumping out of planes,” he said. “We’re veteran owned and operated so we have a lot of support.”Peltier offers discounts to members of the military, veterans and first responders.Airborne’s showcase burrito, known as the “Blue Falcon” that’s rolled and grilled sells for $18. The savory burrito with marinated chicken and steak comes in a 12-inch flour tortilla loaded with Spanish rice, black beans, corn, shredded cheese, nacho cheese, avocado, Chimichurri sauce, pico de gallo, sautéed red and green peppers, sautéed onions, and is drizzled with a southwest sour cream.Other burritos sell for $13 or $15, depending on if you want chicken or steak, and include the “Thai Sweet Chili,” “Quebec Queso,” “Panamanian Pineapple Pico” and “Freedom Fajita.” Burritos can be served in a bowl, instead of a tortilla, and modified such as spice levels and adjusting ingredients to a customer’s preferences.Other menu items include the “Nepali Napalm Nachos.” These warm, lightly salted tortilla chips are served with jalapeño nacho cheese, shredded queso blanco cheese, black beans, Spanish rice, hot giardiniera, southwest sour cream, and pico de gallo. The chicken will cost you $16, and the steak will run you $18. The “Jamaican Jerk Chips and Jalapeño Queso” sell for $11.The community support helped Airborne Burritos survive the adversity of the COVID-19 pandemic.“We had to improvise, adapt and overcome,” Peltier said about the pandemic. “We were one of the first trucks to get out to the people and go to the neighborhoods.”This is the last week of the season for the food truck, but customers can still get their Airborne Burritos fix at the business’ brick and mortar location at Griff’s Georgetown Ice Arena, located in Hudsonville at 8500 48th Ave. The location, which is home to Grand Valley State University, Hudsonville, Jenison and Grandville’s hockey teams, is open throughout the hockey season from October through March.The business also participates with Uber Eats and Grubhub.Catering options are also available for events including corporate luncheons, weddings and graduations.For more information, weekly schedules and current menu items check out Airborne Burritos’ <a href="https://www.facebook.com/airborneburritos/">Facebook page</a>.
