    Daisy’s Empanadas and More is Launching a Food Truck

    Daisy’s Empanadas & More, LLC , a pop-up eatery offering freshly made-to-order Empanadas with authentic ingredients, is preparing to open a new food truck.

    The eatery, owned by Daisy and Eugene Smith , recently submitted a plan review application to open a new food truck. Daisy Smith tells What Now Jacksonville that they hope to launch the food truck as soon as possible. The duo has served as a pop-up vendor and food delivery service since 2021 and participates in several local events. The Smiths are preparing to take their delicious empanadas and sides on the road, serving the greater Jacksonville area.

    “When the 2020 Pandemic hit and hosting or cooking for guests was not allowed, we started a business plan that originally started off as made-to-order-to-go boxes that we would just drop off to people,” according to the company’s website. “It wasn’t until October 2021 that the vision came together, and we established Daisy’s Empanadas and More, LLC. Now, we look forward to working towards owning our own food truck!!! Hope to have you all along for the adventure, plus great food is a bonus!!”

    When the food truck launches, customers can expect crispy pastry dough filled with made-to-order ingredients. Each empanadas is unique per request. Filling options include chicken, beef, seafood, pizza toppings, and more. Meatless options are available upon request. The eatery also offers a handful of sides, including Spanish rice and beans, sweet fried plantains, fried green plantains, and home-cut fries.

    “We are soo excited to get started!” Daisy Smith tells What Now Jacksonville. “We decided at the beginning of the year to take the leap and invest in the food truck journey! We are just waiting for the inspections from my understanding. The truck is complete and ready to roll!”
