Brine Oysters Champagne & Caviar , a local pop-up that has been on hiatus for the past year and a half, is getting ready to open a storefront in San Marco at 1435 Naldo Ave.

The company recently signed a five-year lease with plans to open in late Summer 2024 , according to the company’s Facebook , and first reported by the Jacksonville Business Journal . Owner Chris and Julie Cohen plan to open the 1,200 square-foot space with only about 12 seats for customers, plus a patio with an additional 24 seats, offering the same delicious seafood options, mainly oysters and crudo, that was found in the Vagabond Coffee & Co-op at 934 1 2 Edgewood Ave.

While seafood will be the star of the show at this new restaurant, the owners are planning to expand the menu quite a bit, especially with beer, wine, and champagne. Customers can pair their seafood options with different types of wine, such as a vino verde or a Chacolí, a very dry white wine whose taste is influenced by the salty seaside air in the northern Basque country. Other food options for the restaurant include a 12-course tasting menu.

“It’ll be a pretty extensive menu — lots of bubbles really go well. We’ll have some fun, a vino verde or a Chacolí, different things to try out and see how they pair,” Julie Cohen tells the Jacksonville Business Journal. “It’ll be a lot of similar things to what we did in the pop-up, but much more elevated. That was the ground level of what Chris wants to do.”
