    In the south, two foods are of utmost importance: pimento cheese and fried chicken. When thinking about easy party recipes, I decided to combine the two into the perfect, easy-to-make recipe: Fried Chicken and Pimento Cheese Sliders.

    Fried Chicken Pimento Cheese Sliders With Bacon

    JC's note: The best part of this recipe? There’s a shortcut: I used popcorn chicken instead of frying my own! You can make your own fried chicken, certainly; that said, I think it’s best to take a couple of shortcuts when throwing a party! It makes entertaining easier and less stressful.

    Ingredients

    For The Sliders

    • Frozen Popcorn Chicken
    • 12 Brioche Sliders
    • 8 slices Bacon

    For The Southern Pimento Cheese

    • 1 c Monterey Jack shredded/freshly grated
    • 1 c Sharp Cheddar shredded/freshly grated
    • 1 c Parmesan shredded/freshly grated
    • 3/4 c Mayonnaise
    • 4 oz Cream Cheese
    • 6 tbsp Diced Pimentos
    • 4 tbsp Vidalia Onion grated
    • Garlic Powder to taste
    • Kosher Salt to taste
    • Black Pepper to taste

    Instructions

    For The Sandwiches

    • Slice brioche buns in half through the middle.
    • Cook popcorn chicken according to instructions on bag.
    • Cook bacon to your desired level of doneness (oven, skillet, or microwavable bacon). Allow to cool and roughly chop.

    For The Pimento Cheese

    • In a large bowl, combine all ingredients. Mix until well-incorporated. I typically make mine in my stand mixer!
    • Add more kosher salt, black pepper, and garlic powder to your desired taste. If the pimento cheese is too thick, slowly add more mayonnaise.

    To Complete The Sandwiches

    • Put pimento cheese on both sides of the brioche bun.
    • Add chopped bacon + popcorn chicken to bottom bun.
    • Add top bun and serve. Use small skewers or large toothpicks to hold sandwiches together if need be.
