    Melt-in-your-mouth Crockpot Creamy Chicken - Must-try Fall recipe

    This is one of my favorite dishes. When my son was younger, he was such a picky eater and this was one of the dishes he would eat hands down, every single time.

    The chicken is fall-apart tender, it's creamy, well-seasoned and can be enjoyed with rice or pasta.

    It's especially good in the cooler months of Fall and Winter.

    Ingredients

    • 4-6 chicken thighs (boneless, skinless)
    • 1 packet Italian seasoning (about 1 oz)
    • 1 can cream of chicken soup (10.5 oz)
    • 8 oz cream cheese (softened)
    • ½ cup grated Parmesan cheese
    • Salt and pepper to taste
    • Fresh parsley or basil for garnish (optional)

    Directions

    • Prepare the Chicken: Season the chicken thighs with salt and pepper. Place them in the bottom of the crockpot.
    • Mix the Sauce: In a mixing bowl, combine the Italian seasoning, cream of chicken soup, softened cream cheese, and grated Parmesan cheese. Mix until well combined and smooth.
    • Pour the Mixture: Pour the creamy mixture over the chicken thighs in the crockpot, ensuring they are well coated.
    • Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
    • Serve: Once cooked, gently shred the chicken in the crockpot using two forks. Stir the sauce to combine.
    • Garnish and Enjoy: Serve the creamy chicken over rice, pasta, or with crusty bread. Garnish with fresh parsley or basil if desired.
