    Red Velvet Cake Mix Cookies: A flavorful, delicious cookie for Fall

    Red velvet cookies! You make these with cake mix which makes them super easy to create. About 10 minutes of prep time then bake. So delicious.

    Ingredients

    • 1 box red velvet cake mix (15.25 oz)
    • 1/2 cup vegetable oil
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup white chocolate chips or chocolate chips (optional)
    • Powdered sugar for dusting (optional)

    Directions

    • Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Mix the Ingredients: In a large mixing bowl, combine the red velvet cake mix, vegetable oil, eggs, and vanilla extract. Mix until a soft dough forms. If using, gently fold in the white chocolate chips or chocolate chips.
    • Scoop the Dough: Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set. The centers may look slightly underbaked, but they will firm up as they cool.
    • Cool: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
    • Dust with Powdered Sugar (Optional): Once cooled, you can dust the cookies with powdered sugar for an extra touch.
    • Serve and Enjoy: Enjoy your delicious red velvet cookies with a glass of milk or your favorite beverage!

    Optionally, you can add a bag of white chocolate chips in the dough to have red velvet white chocolate chip cookies!

    I always think of this as more of a dessert for adults but, my 12-year old son absolutely loves them! They are one of his favorite cookies!

    Pair these with a hot cup of tea or coffee or a cold glass of milk.
