    Flavor-filled Lemon Dill Rice: Savory, rice recipe for anything

    I love this rice recipe for literally anything. Need a side dish? Instead of plain white rice or plain brown rice, use this lemon dill rice recipe.

    Ingredients

    • 1 cup long-grain white rice (such as basmati or jasmine)
    • 2 cups chicken or vegetable broth (or water)
    • 1 tablespoon olive oil or butter
    • 1 teaspoon lemon zest (freshly grated)
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons fresh dill (chopped, or 1 tablespoon dried dill)
    • 1/2 teaspoon of turmeric or saffron to make rice turn yellow color (optional)
    • Salt and pepper to taste
    • Fresh dill, garnish (optional)

    Directions

    • Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.
    • Cook the Rice: In a medium saucepan, heat the olive oil or butter over medium heat. Add the rinsed rice and toast it for about 2-3 minutes, stirring frequently.
    • Add Liquid: Pour in the chicken or vegetable broth (or water) and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
    • Fluff the Rice: Remove the saucepan from heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork.
    • Add Flavorings: Stir in the lemon zest, lemon juice, and chopped dill. Season with salt and pepper to taste.
    • Serve: Serve the lemon dill rice warm as a side dish with grilled chicken, fish, or vegetables.
