    Lemon Madeleines: Delightful Dessert Recipe

    Madeleines are one of my favorite French pastries. I've had plain ones, lemon ones, stuffed Madeleines, you name it.

    Nothing beats a fresh, homemade madeleine and this recipe is a lemon version.

    You can dust these powdered sugar if you wish and enjoy with a hot cup of tea or coffee.

    Ingredients

    • 1 cup all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, melted and cooled
    • 2 large eggs
    • 2/3 cup granulated sugar
    • Zest of 1 lemon
    • 1 tablespoon fresh lemon juice
    • 1 teaspoon vanilla extract
    • Powdered sugar for dusting (optional)

    Directions

    To begin, preheat your oven to 375°F (190°C) and grease a madeleine pan with butter or cooking spray.

    In a bowl, whisk together the flour, baking powder, and salt, then set this mixture aside.

    In a separate large bowl, beat the eggs and granulated sugar together until the mixture is pale and frothy, about 3-5 minutes. This will incorporate air for a light texture.

    Next, gently fold in the lemon zest, lemon juice, and vanilla extract into the egg mixture. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.

    Finally, drizzle in the melted butter and mix until smooth, being careful not to overmix.

    Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.

    Bake in the preheated oven for 10-12 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. Once baked, remove the madeleines from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack.

    For a finishing touch, dust with powdered sugar just before serving.
