This is a simple recipe you can whip up in your kitchen. This is a good cookie recipe for the holidays but, to be honest, you can bake the year round.

    That's how good they are!

    Ingredients

    Dry Ingredients:
    • 1 cup all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon

    Wet Ingredients:
    • 1/2 cup unsalted butter, softened
    • 1/2 cup granulated sugar
    • 1/2 cup packed brown sugar
    • 1 large egg
    • 1 teaspoon vanilla extract

    Other Ingredients:
    • 1 1/2 cups rolled oats
    • 1 cup raisins
    • Optional: 1/2 cup chopped walnuts or pecans

    Instructions

To begin, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon, then set this mixture aside.

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, which should take about 2-3 minutes.

Next, beat in the egg and vanilla extract until well combined.

Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Once incorporated, fold in the rolled oats, raisins, and any nuts you’re using until evenly distributed.

Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

The centers may appear slightly underbaked, but they will firm up as they cool.

After baking, allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

    What do you think?

Eat these cookies warm with a cold glass of milk. Or make a cookie icecream sandwich by putting a scoop of vanilla icecream inbetween two warm cookies for the ultimate sweet treat!
