There's something about the sweet, crunchy coconut shrimp that drives me nuts in the best way. It's so delicious. Perfectly seasoned and great with a marmalade dipping sauce (recipe also included).
Now I don't have to spend $18 at a restaurant to get this. I can whip it up in my kitchen. I hope you love it as much as I do!
Ingredients
1 pound large shrimp, peeled and deveined
1/2 cup all-purpose flour
2 large eggs
1 cup shredded coconut (sweetened or unsweetened, depending on your preference)
1/2 cup breadcrumbs (panko for extra crunch is ideal)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (optional)
Vegetable oil for frying
Optional for serving: sweet chili sauce or lime wedges
Directions
To start, set up a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and a mixture of shredded coconut, breadcrumbs, salt, pepper, garlic powder, and paprika in a third bowl. Dredge each shrimp first in the flour, shaking off any excess, then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the shrimp in the coconut-breadcrumb mixture, pressing gently to ensure the coating sticks.
Next, heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded shrimp in a single layer, cooking in batches if necessary to avoid overcrowding the pan. Fry the shrimp for about 2-3 minutes on each side, or until they are golden brown and cooked through. Use tongs to transfer the cooked shrimp to a paper towel-lined plate to drain any excess oil.
Serve the coconut crusted shrimp warm, accompanied by sweet chili sauce for dipping or lime wedges for a fresh squeeze of flavor. Enjoy your tasty coconut crusted shrimp!

Directions
To make the dipping sauce, simply combine the orange marmalade, soy sauce, rice vinegar, and sesame oil in a small bowl. Whisk everything together until well blended. If you’d like a bit of spice, add grated fresh ginger and a pinch of red pepper flakes, adjusting to your taste preference.
Once combined, let the sauce sit for about 10-15 minutes to allow the flavors to meld. Serve it in a small dish alongside your coconut crusted shrimp for a delightful dipping experience. Enjoy!
