    Ingredients

    For the pancakes:
    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)
    • 1 large egg
    • 2 tablespoons melted butter (plus more for cooking)
    • 1 cup fresh or frozen cranberries (if using frozen, do not thaw)

    For serving:
    • Maple syrup
    • Powdered sugar (optional)
    • Whipped cream (optional)

    Directions

    Prepare the batter:

      • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
      • In another bowl, mix the buttermilk, egg, and melted butter until well combined.
      • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the cranberries.

    Cook the pancakes:

      • Heat a non-stick skillet or griddle over medium heat and add a little butter to coat the surface.
      • Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
      • Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.

    Serve:

      • Keep the pancakes warm in a low oven while you cook the remaining batter.
      • Serve warm with maple syrup, a dusting of powdered sugar, and whipped cream if desired.
