    Ingredients

    For the crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted

    For the chocolate filling:
    • 1/2 cup granulated sugar
    • 1/3 cup unsweetened cocoa powder
    • 1/4 cup cornstarch
    • 1/4 teaspoon salt
    • 2 3/4 cups whole milk
    • 4 large egg yolks, lightly beaten
    • 2 tablespoons unsalted butter
    • 1 teaspoon vanilla extract
    • 4 ounces semi-sweet chocolate, chopped

    For the whipped cream topping:
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract

    Directions

    Make the crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Allow to cool completely.

    Prepare the chocolate filling:
    • In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt.
    • Gradually add the milk while whisking to combine. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 8-10 minutes).
    • Remove from heat and stir a small amount of the hot mixture into the beaten egg yolks to temper them. Then gradually whisk the egg yolk mixture back into the saucepan.
    • Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly until thickened.
    • Remove from heat and stir in the butter, vanilla extract, and chopped chocolate until smooth. Allow to cool slightly.

    Assemble the pie:
    • Pour the chocolate filling into the cooled graham cracker crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

    Make the whipped cream topping:
    • In a medium bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

    Serve:
    • Once the pie is set, remove it from the refrigerator. Top with the whipped cream, spreading it evenly over the chocolate filling. Optionally, you can sprinkle chocolate shavings or cocoa powder on top for decoration

    What do you think?

This pie is so good, I would eat it for breakfast! I love having this with a hot cup of coffee or tea. Enjoy and savor every bite!
