    I bet you've never had chai spiced pancakes before? These pancakes are so good. They are a mix of spicy, flavorful chai with fluffy pancakes. They pair nicely with syrup and butter. And a hot cup of coffee or tea.

    Ingredients

    Dry ingredients:
    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cardamom
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon black pepper

    Wet ingredients:
    • 1 cup milk (dairy or non-dairy)
    • 1 large egg
    • 2 tablespoons melted butter (or oil)
    • 1 teaspoon vanilla extract

    For serving:
    • Maple syrup
    • Whipped cream (optional)
    • Chopped nuts (optional)

    Directions

    • Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and black pepper.
    • Mix wet ingredients: In another bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until well blended.
    • Combine ingredients: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are okay.
    • Cook pancakes: Preheat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes until golden brown.
    • Serve: Serve the pancakes warm with maple syrup, whipped cream, and chopped nuts if desired.
