    You can't go wrong with buttermilk pancakes, right? These can be dressed up in so many clever ways. Add fruit, chocolate, coconut, or other toppings you enjoy or mixed right into the batter.

    My son loves to sprinkle in chocolate chips. I like to throw fresh fruit like blueberries or raspberries in these sometimes.

    Ingredients

    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup buttermilk
    • 1 large egg
    • 2 tablespoons unsalted butter, melted (plus extra for cooking)
    • 1 teaspoon vanilla extract (optional)

    Directions

    1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    2. Combine Wet Ingredients: In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
    3. Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay. Do not overmix!
    4. Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter to coat the surface.
    5. Cook the Pancakes: Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
    6. Serve: Serve warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
