I love to have a slice for breakfast with a dollop of whipped cream and a hot coffee.

    Ingredients

    For the Cake:
    • 1 3/4 cups all-purpose flour
    • 3/4 cup unsweetened cocoa powder
    • 1 1/2 teaspoons baking powder
    • 1 1/2 teaspoons baking soda
    • 1/2 teaspoon salt
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 2 large eggs
    • 1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon vinegar)
    • 1/2 cup vegetable oil
    • 2 teaspoons vanilla extract
    • 1 cup boiling water

    For the Chocolate Glaze:
    • 1/2 cup heavy cream
    • 1 cup semi-sweet chocolate chips
    • 1 tablespoon butter (optional, for shine)

    Directions

    • Preheat the Oven:
      • Preheat your oven to 350°F (175°C). Grease and flour a 10-cup bundt pan.
    • Mix Dry Ingredients:
      • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
    • Combine Wet Ingredients:
      • In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
    • Combine Mixtures:
      • Add the wet ingredients to the dry ingredients and mix until just combined. Gradually stir in the boiling water until the batter is smooth (it will be thin).
    • Bake:
      • Pour the batter into the prepared bundt pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
    • Cool:
      • Let the cake cool in the pan for about 10-15 minutes. Then carefully invert it onto a wire rack to cool completely.
    • Make the Chocolate Glaze:
      • In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips. Let sit for a minute, then stir until smooth. If desired, add butter for extra shine.
    • Glaze the Cake:
      • Once the cake is completely cool, drizzle the chocolate glaze over the top, allowing it to drip down the sides.

    What do you think?
