Nothing beats a good homemade biscuit. But, what about a homemade strawberry biscuit. You get the zingy, fresh, sweet flavor of strawberry with a flaky, buttery and rich biscuit.

I would recommend you try this with a dollop of butter and a hot cup of coffee. It makes a delightful, simple and delicious breakfast.

    Ingredients

    For the Biscuits:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/4 cup granulated sugar
    • 1/2 cup cold unsalted butter, cubed
    • 3/4 cup buttermilk (or milk with 1 tablespoon vinegar)
    • 1 cup fresh strawberries, hulled and chopped

    For the Topping (optional):
    • 2 tablespoons melted butter
    • Extra sugar for sprinkling

    Directions

    • Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
    • Prepare the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
    • Cut in the Butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Add Buttermilk and Strawberries: Pour in the buttermilk and gently stir until just combined. Fold in the chopped strawberries, being careful not to overmix.
    • Shape the Biscuits: Turn the dough onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a round cutter or a glass. Place the biscuits on the prepared baking sheet.
    • Bake: Brush the tops of the biscuits with melted butter and sprinkle with extra sugar, if desired. Bake for 12-15 minutes, or until golden brown.
    • Serve: Allow the biscuits to cool slightly before serving. Enjoy them warm on their own or with butter and jam!
