    Tart and Zingy Cranberry Orange Loaf: Fall Dessert Delight

    Cranberries and orange are two flavors that pair so beautifully together. This cranberry orange loaf perfectly illustrates this. It's fresh, tart, zingy, sweet, all the flavors dance in your mouth.

    Eat this dusted with powdered sugar or a dollop of whipped cream and a hot cup of tea or coffee.

    Ingredients

    • For the Loaf:
      • 1 1/2 cups all-purpose flour
      • 1 teaspoon baking powder
      • 1/2 teaspoon baking soda
      • 1/4 teaspoon salt
      • 1/2 cup unsalted butter, softened
      • 1 cup granulated sugar
      • 2 large eggs
      • Zest of 1 orange
      • 1/2 cup freshly squeezed orange juice
      • 1 cup fresh or frozen cranberries (coarsely chopped)
    • For the Glaze (optional):
      • 1 cup powdered sugar
      • 2-3 tablespoons orange juice

    Directions

    • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
    • Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-4 minutes.
    • Add Eggs and Flavor: Beat in the eggs, one at a time, then add the orange zest and orange juice. Mix until well combined.
    • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the chopped cranberries.
    • Pour into Pan: Pour the batter into the prepared loaf pan and smooth the top.
    • Bake: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil.
    • Cool: Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Make the Glaze (Optional): In a small bowl, whisk together the powdered sugar and orange juice until smooth. Drizzle over the cooled loaf.
    • Serve: Slice and enjoy your cranberry orange loaf as a delicious breakfast or snack!
