    Earthy, Nutty Pecan Bundt Cake with Icing | Breakfast Loaf Must Try

    Ingredients

    For the Cake:

    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup buttermilk (or regular milk)
    • 1 cup chopped pecans (toasted, if desired)

    For the Vanilla Icing:

    • 1 cup powdered sugar
    • 2-3 tablespoons milk
    • 1/2 teaspoon vanilla extract


    Directions

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.

    Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

    Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

    Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Gently fold in the chopped pecans.

    Pour into Pan: Pour the batter into the prepared bundt pan, smoothing the top.

    Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 15 minutes, then carefully invert it onto a wire rack to cool completely.

    Make the Vanilla Icing: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if necessary.

    Glaze the Cake: Once the cake is completely cooled, drizzle the vanilla icing over the top, allowing it to flow down the sides.

    Serve: Slice and enjoy your delicious pecan bundt cake drizzled with vanilla icing!
