This creamy red pepper pesto oven baked chicken recipe went viral on TikTok.

It looks super easy to make. I'd eat this with crusty bread.

Ingredients and Directions

• 2 large chicken breasts
• 2 handful cherry tomatoes
• 60g reduced fat soft cheese/single cream
• 1 Tbsp red pesto
• 10g Parmesan
• 200mls chicken stock cube
• 1 tsp paprika
• Mixed italian herbs, garlic, salt and pepper (to your taste)

To serve: basmati rice and broccoli 

Method: Preheat your oven to 200, then add your chicken to an oven dish with some oil followed by the cherry tomatoes. 

Season your chicken with the paprika, mixed Italian herbs, salt and pepper. In a jug, make up the chicken stock and then add in the soft cheese (or cream) and stir until the cheese dissolves. 

Pour this into the oven dish. Add the pesto in, putting some on the chicken itself and some into the sauce and giving it a stir. 

Pop this into the oven for 25-30 mins. 

Make sure the chicken breast is cooked through and piping hot before serving.
