    • 1 ½ cups all-purpose flour

    • Salt and pepper to taste
    • 1 tablespoon olive oil

    • 1 egg (for egg wash)
    • Fresh herbs for garnish (optional)

    Directions

    Step 1: Make the Dough

    1. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, salt, and sugar.
    2. Cut in Butter: Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
    3. Add Ice Water: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Avoid overmixing.
    4. Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Step 2: Prepare the Filling

    1. Prepare Tomatoes: Slice the heirloom tomatoes and place them on a paper towel to absorb excess moisture. Sprinkle with a little salt and let them sit for about 15 minutes.
    2. Mix Cheeses and Herbs: In a bowl, combine the ricotta, Parmesan, minced garlic, thyme, salt, and pepper. Mix until smooth.

    Step 3: Assemble the Galette

    1. Preheat the Oven: Preheat your oven to 400°F (200°C).
    2. Roll Out the Dough: On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer it to a parchment-lined baking sheet.
    3. Spread the Filling: Spread the ricotta mixture evenly over the dough, leaving about a 2-inch border.
    4. Layer the Tomatoes: Arrange the sliced heirloom tomatoes on top of the ricotta mixture, overlapping slightly. Drizzle with olive oil and sprinkle with additional salt and pepper.

    1. Egg Wash: In a small bowl, beat the egg and brush it over the exposed crust for a golden finish.
    2. Bake: Bake for 30-35 minutes, or until the crust is golden brown and the tomatoes are tender.
