    Ingredients

    For the Chicken and Broccoli:

    • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
    • 4 cups broccoli florets (fresh or frozen)
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder

    For the Sauce:

    • ¼ cup soy sauce (or tamari for gluten-free)
    • 2 tablespoons honey or maple syrup
    • 2 tablespoons rice vinegar
    • 2 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)
    • 2 cloves garlic, minced
    • 1 teaspoon fresh ginger, grated (optional)
    • Sesame seeds, for garnish (optional)
    • Green onions, sliced (for garnish)

    For Serving:

    • Cooked rice or quinoa

    Directions

    Step 1: Prepare the Chicken

    1. Season the Chicken: In a bowl, season the chicken pieces with salt, pepper, garlic powder, and onion powder.
    2. Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through. Remove from the skillet and set aside.

    Step 2: Cook the Broccoli

    1. Sauté Broccoli: In the same skillet, add the remaining tablespoon of olive oil. Add the broccoli florets and sauté for 4-5 minutes until tender-crisp. If using frozen broccoli, cook until heated through.

    Step 3: Make the Sauce

    1. Combine Sauce Ingredients: In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch mixture, minced garlic, and ginger (if using).
    2. Add Sauce to Skillet: Pour the sauce into the skillet with the broccoli, stirring to combine. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.

    Step 4: Combine

    1. Add Chicken Back: Return the cooked chicken to the skillet, tossing everything together until well coated in the sauce. Cook for an additional minute to heat through.

    Step 5: Serve

    1. Assemble the Bowls: Serve the chicken and broccoli over cooked rice or quinoa.
    2. Garnish: Sprinkle with sesame seeds and sliced green onions if desired.
