    Rustic Chicken Mushroom Fettucini: Hearty Pasta Dinner Recipe

    Chicken fettucini is a common recipe many have enjoy but add seasoned mushrooms to the mix and you have an even more flavorful and rustic dinner recipe to enjoy.

    This will be a family favorite.

    Ingredients

    For the Pasta:

    • 12 oz fettuccine pasta
    • Salt, for boiling water

    For the Chicken and Sauce:

    • 1 lb boneless, skinless chicken breasts, sliced into strips
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 8 oz mushrooms, sliced (such as cremini or button)
    • 3 cloves garlic, minced
    • ½ cup chicken broth
    • 1 cup heavy cream
    • ½ cup grated Parmesan cheese
    • 1 teaspoon Italian seasoning (optional)
    • Fresh parsley, chopped (for garnish)

    Directions

    Step 1: Cook the Pasta

    1. Boil Water: In a large pot, bring salted water to a boil.
    2. Cook Fettuccine: Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Step 2: Prepare the Chicken

    1. Season the Chicken: Season the chicken strips with salt and pepper.
    2. Cook Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Step 3: Sauté the Mushrooms

    1. Cook Mushrooms: In the same skillet, add the sliced mushrooms and sauté for about 5 minutes until they are browned and tender. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Step 4: Make the Sauce

    1. Add Broth and Cream: Pour in the chicken broth and bring it to a simmer. Reduce heat and stir in the heavy cream, cooking for about 3-5 minutes until slightly thickened.
    2. Incorporate Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning, mixing until smooth. Season with additional salt and pepper to taste.

    Step 5: Combine

    1. Add Chicken and Pasta: Return the cooked chicken to the skillet, along with the cooked fettuccine. Toss everything together to coat the pasta and chicken in the creamy sauce.

    Step 6: Serve

    1. Garnish: Serve hot, garnished with fresh parsley and extra Parmesan if desired.
