You'll want this every week for dinner.

    Enjoy!

    Ingredients

    For the Steak:

    • 2 ribeye or sirloin steaks (about 1 inch thick)
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, crushed
    • Fresh rosemary or thyme (optional, for garnish)

    For the Truffle Fries:

    • 2 large russet potatoes
    • 3 tablespoons olive oil
    • Salt, to taste
    • 1-2 tablespoons truffle oil (adjust based on preference)
    • ¼ cup grated Parmesan cheese (optional)
    • Fresh parsley, chopped (for garnish)

    Directions

Step 1: Prepare the Truffle Fries

    1. Preheat Oven: Preheat your oven to 425°F (220°C).
    2. Cut the Potatoes: Wash and peel the potatoes (if desired). Cut them into thin strips to create fries.
    3. Soak the Potatoes: Soak the potato strips in cold water for about 30 minutes to remove excess starch. This helps them become crispier.
    4. Dry and Season: Drain and pat the potatoes dry. In a large bowl, toss the potato strips with olive oil and salt until well coated.
    5. Bake the Fries: Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Step 2: Cook the Steak

    1. Season the Steak: Pat the steaks dry with paper towels and season both sides with salt and pepper.
    2. Heat the Skillet: In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks.
    3. Sear the Steaks: Cook for about 4-5 minutes on one side without moving them, until a nice crust forms. Flip the steaks and add butter and crushed garlic to the skillet.
    4. Baste: Continue cooking for another 4-5 minutes, basting the steaks with the melted butter. Cook to your desired doneness (135°F for medium-rare).
    5. Rest the Steaks: Remove the steaks from the skillet and let them rest for about 5 minutes before slicing.

Step 3: Finish the Truffle Fries

    1. Add Truffle Oil: Once the fries are out of the oven, drizzle them with truffle oil and toss gently to coat. If using, sprinkle with grated Parmesan cheese while still hot.
    2. Garnish: Top with fresh parsley for extra flavor.

    Step 4: Serve

    1. Plate the Dish: Serve the sliced steak alongside a generous portion of truffle fries.
    2. Garnish: Optionally, garnish the steak with fresh herbs.
