    Ingredients

    1 cup (2 sticks) unsalted butter, softened

    1 cup granulated sugar

    1 large egg

    1 teaspoon vanilla extract

    1 teaspoon almond extract (optional)

    2 1/2 cups all-purpose flour

    1 teaspoon baking powder

    1/2 teaspoon baking soda

    1/4 teaspoon salt

    1/2 cup strawberry puree (fresh or frozen, thawed)

    Pink food coloring (optional, to enhance color)

    Powdered sugar (for dusting, optional)

    Directions

    Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

    Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).

    Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) until well combined.

    Prepare Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.

    Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the strawberry puree. If desired, add a few drops of pink food coloring to achieve your desired shade.

    Scoop the Dough: Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

    Bake: Bake for 10-12 minutes, or until the edges are set and the tops are lightly golden. The centers should still look slightly underbaked.

    Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

    Dust with Powdered Sugar: Once cooled, you can dust the cookies with powdered sugar for a lovely finish.
