Craving a comforting and easy-to-make dish that fits any season? Look no further!

I think you’re going to love these Grilled Potatoes in Foil. Simple yet incredibly flavorful, this recipe transforms rustic ingredients into something deliciously irresistible. With a touch of smoky grilled flavor, these potatoes are sure to become a favorite.

Whether on a summer grill, cooked over a cozy campfire, or baked in your oven, these easy and simple foil packets invite you to enjoy the hearty flavors of potatoes and fresh vegetables all year round.

Having a big family can be challenging when it comes to food — especially when taking a month-long camping trip to the Florida Keys — with seven little ones in tow. I do wonder what I was thinking. 😂

Meals were something I needed to plan out and always a big to-do. These grilled potatoes in foil were hands-down a dependable hit over the campfire and on the grill each and every time.

The foil packets always looked a little different. Some preferred potatoes and onions — smothered in ketchup, while others filled their packets with our farmer’s market finds to the rim — potatoes, zucchini, bell peppers, chiles, onions, garlic, and broccoli crowns.

This truly is a customizable foil packet recipe and irresistibly good, while still offering lots of good-for-you benefits. I make these year-round, but I always look forward to making these for our first summer grill and of course, campfire cooking — family traditions have a way of making our meals a touch more special.

    Ingredients

Prep time: 15 mins | Cook time: 30 mins| Total Time: 45 mins | Serves: 2 foil packets

    • 1 lb yellow potatoes, washed and sliced 1/4-inch thick
    • 1/2 large onion, sliced
    • 1/2 large red or green bell pepper, sliced (more or less depending on preference)
    • 6 cloves minced garlic (adjust to your preference)
    • 2 tablespoons coconut oil, avocado oil, or canola oil, divided per packet
    • 2 tsp garlic powder, divided per packet
    • 2 tsp onion powder, divided per packet
    • 2 tsp paprika, divided per packet
    • 1/4 tsp cayenne (optional), divided per packet
    • 1 tsp sea salt, divided per packet
    • Optional: jalapeños, broccoli florets, mushrooms, or other vegetables, sliced

    Instructions

    1. Wash and slice the potatoes into 1/4-inch slices. Prepare additional vegetables according to your preferences and slice them.
    2. Lay out 2 sheets of aluminum foil side by side (about 24 inches in width).
    3. In the center of each foil sheet, place half the potatoes and the desired amount of onions, bell peppers, and any optional vegetables.
    4. Drizzle 1 tablespoon of oil over the vegetables in each packet.
    5. Sprinkle all seasonings over the contents of each packet, adjusting more or less according to your taste.
    6. Fold the foil over the vegetables, sealing the edges well to form individual packets. Double-wrap them with another sheet of foil to prevent spillage and burning.
    7. Preheat the grill to medium-high heat.
    8. Place the foil packets on the grill, and cook for about 25–30 minutes, flipping halfway through, or until the potatoes are soft and tender. Watch to prevent burning.
    9. Carefully open each packet, watching for steam.
    10. Serve the grilled potatoes directly from the foil for a simple and enjoyable meal, or transfer them to a serving dish.

    Notes

    • After 25 minutes, open one packet slightly to check if the potatoes are tender. If not, reseal the packet and continue baking and check in a few more minutes.
    • Cut vegetables into similar sizes to ensure they cook evenly.
    • If using regular foil, double-wrap to prevent tearing and spillage.
    • Customize the vegetables based on what you have on hand or what you enjoy most. Options like zucchini, peppers, broccoli, and mushrooms add great texture and flavor.

These Grilled Potatoes in Foil are a must-try — they’re easy, customizable, and an easy crowd-pleaser. And with high-quality oils and nutrient-rich potatoes, you get a healthy and delicious dish every time.

Simply rustic, easy, and incredibly flavorful, they’re an easy win.

Whether for a summer barbecue or a cozy family dinner, these foil packet potatoes are sure to become a loved staple. Happy grilling!
