    Giant Fluffy Biscuits for 2.

    Cooking for two is sometimes challenging and takes organization. It seems that most recipes are for families, we are empty nesters. After searching cookbooks and experimenting with a few recipes I came up with a few recipes for 2 people and I am working on more. Check out my article Cooking for 2 Bacon and Cheese Baked Macaroni. My husband loves biscuits, the canned ones are ok but nothing like homemade. This is the recipe I came up with and my husband said this is it no more canned biscuits. The recipe is so easy and can be doubled for extras or frozen.

    Ingredients you will need:

    2/3 cup flour

    ¼ tsp salt

    1 ½ tsp. baking powder

    3 tsp. sugar

    3 tbsp. butter (I freeze my butter and use my grater) it helps incorporate the butter more evenly.

    1/4 cup cold milk (set 1 tsp milk to the side to brush tops of biscuits before baking).

    Directions:

    1. In a small bowl stir flour, salt, baking powder and sugar.

    2. Grate the butter straight into the flour mixture and pour the cold milk over the flour and butter mix with a fork until it holds together.

    3. Turn the dough onto a floured surface and knead 4 or 5 times. Roll out about 1” thick use a cookie cutter, jar lid or a glass dipped in flour cut the biscuits. Put the biscuits on a baking sheet about 1” apart. Brush the tops with the milk, this gives the tops a more golden-brown color.

    4. Preheat your oven to 375* and bake the biscuits for 20-25 minutes until light golden brown. So good with butter and honey or my all-time favorite biscuits and gravy.

    Since the closing of the Big Spring Mill in Elliston Virginia I am too depressed to make biscuits. ☹️
