    Ice Water White Cake

    In my search for unique recipes, I came across Ice Water White Cake. I was very intrigued and knew that this had to be my next experiment. This recipe is easy with just a few ingredients.

    Any icing would work for this cake. I decided to cover the cake with whipped topping (cool whip would work great) and I also made a fruit compote which we thought was a great addition to the cake.

    This cake has a different consistency than box cake mixes or a regular homemade recipe. In this article I will show you step by step how to make this ice water white cake and compote.

    First gather your ingredients and supplies.

    2 8” or 9” pans

    Nonstick pan spray

    ½ cup softened butter.

    2 cups granulated sugar.

    3 ½ cups of all-purpose flour.

    ½ tsp. salt.

    3 tsp baking powder.

    1 ½ cups Ice water.

    ¼ tsp. almond flavoring.

    4 egg whites, stiffly beaten.

    Refrigerate a mixing bowl and a medium size bowl for at least 30 minutes. Remove from the refrigerator and add the egg whites to the mixing bowl and whip until stiff. Put the egg whites in the medium size refrigerated bowl and set aside.

    In another mixing bowl whip the butter until fluffy and gradually add the sugar and beat the mixture well until its well combined. In a separate bowl, stir the dry ingredients together. Alternate adding the dry ingredients with the ice water ending with dry ingredients to the butter and sugar mixture mix for a few minutes until it's all well combined. Add the Almond flavoring to the batter and mix for a couple of minutes on medium speed. Lastly, gently fold in the egg whites into the batter, using a clean rubber spatula.

    Pour the mixed batter into the 2 cake pans. Bake at 350* for 30 minutes. Let cool completely before icing.

    What you'll need to make the fruit compote:

    Medium size saucepan.

    2 ½ cups fresh or frozen fruit (I used a berry mix)

    1/2 cup sugar

    Add ½ the fruit and sugar to the saucepan and cook on medium heat until the fruit is soft, and the sugar is thick. Add the remaining fruit and cook for 5-10 minutes and let cool completely before pouring over the cake. Enjoy!!!
