Holiday Baking: Cake Mix Cookies

The Holiday season is coming up on us fast. This is my favorite time of the year and I especially love all the baking. This easy recipe for Christmas cookies using a box cake mix is a fun way to make cookies for holiday get-togethers or for giving as gifts. 

In this article I will show you two of my favorites. First is the Fruitcake cookies using a yellow cake with fruit cake mix (the dried fruit that comes out during the holidays), and Chocolate Mint Chip cookies made with devil's food cake and chocolate mint chips.

Ingredients:

 Fruit Cake Cookies:

1 package of yellow cake.

 1/4 cup vegetable oil.

 1 egg 1 tsp. cinnamon.

 1 tsp. vanilla.

2 -4 tsp milk.

1/3 cup fruit cake mix plus 2 tbsp for top of cookies.

Mix all ingredients well, add just enough milk so that the dough is not dry. Roll cookies into balls and put them on a cookie sheet. Smash them down with your palm or use the smooth part of the bottom of a glass. Top cookies with the extra ingredients and bake in a 350* oven until golden brown.

 Chocolate Mint Chip:

 1 devil's food cake mix.

 1/4 cup vegetable oil.

1tsp vanilla.

2-4 tsp. milk.

3/4 bag or less chocolate mint chips, saving the rest for the top of the cookies.
