    Ingredients:

    · 2-3 ripe banana’s

    · 1 cup sugar

    · ½ cup brown sugar

    · 1 ½ tsp. vanilla

    · 1 ½ tsp. molasses

    · 2 ½ cup flour

    · ½ tsp. cornstarch

    · 1 tsp. baking soda

    · ¾ tsp. kosher salt


    Glaze:

    · 2 cups powder sugar

    · 3 tbsp water

    · ½ tsp almond or any other flavoring you would like

    · ½ cup chopped nuts

    Directions:

    1. Preheat oven to 350*

    2. In a mixing bowl on low-medium speed blend the bananas, sugars, vanilla and molasses until it is blended and a thin consistency.

    3. In a separate bowl stir together the flour, cornstarch, baking soda, and kosher salt.

    4. Add the flour mixture a little at a time to the banana mixture until it is blended well.

    5. Line a cookie sheet with parchment paper. Using a cookie scoop or ice cream scoop (depending on the size of cookie you want) scoop the dough on the cookie sheet about 3” apart.

    6. Bake for about 5 or 6 minutes, turn and bake for the same amount of time until the cookies are just turning a light brown. Let cool on the cookie pan.

    7. While the cookies are cooling make the glaze stir all the ingredients until smooth add a little more water if it seems to dry.

    8. When the cookies are cooled, set in the refrigerator for about 5 minutes.

    9. When the cookies are completely cooled drizzle the glaze over the top and sprinkle with nuts. Store in an airtight container and refrigerate.
