When my friend Jessie sent this recipe to me, I thought ok that’s interesting and sounded like something straight out of the South. After researching Frogeye Salad, I found out that it is said to be midwestern and originally called Fisheye Salad or Fish’s Eye Salad.

How to make Homemade creamer. This homemade creamer has only three ingredients and it's so much healthier than the commercial brands. This creamer is easy to make and you can choose from mnay flavors. I love creamers and I have bought the store-bought brands for years, but i found this and it fits in much better with our healthier food choices. My husband is a French vanilla kind of guy, but for my creamer i like to try new combinations. It can be fun coming up with new flavors ive made a few that are really delicious.
Chocolate Crinkle Cookies or Pixie Cookies
Chocolate crinkle or pixie cookies. I do not know where chocolate crinkle cookies or pixie cookies originated, but they are certainly some of the best cookies around. It is rumored that a woman who was a close friend of “the Betty Crocker” had given her a crinkle cookie and Betty asked for the recipe. Another theory is that Crinkle cookies originated in the Philippines and the recipe became popular in the US. Their popularity is well deserved! Crinkle cookies are some of the best tasting cookies there are. This is my favorite recipe:
Hobo Stew
Hobo stew originated in the early 1900s during the great depression. It was said to be a staple in the Hobo camps of the time. During the depression, living life as a Hobo was a hard and food was not easy to come by but when the opportunity did present itself to take in a hot meal, they made the best of what they had, and Hobo stew was a way to make what they had available go a little further. The name Hobo Stew came to mean a stew made from whatever can be scrounged up to make a decent mix of meat, vegetables, and beans. Hobo Stew is sometimes made with hotdogs, sausage, pork, deer meat or whatever protein is easy to obtain.
American Legion Post 226, Coweta, OK still going strong.
The small town of Coweta Oklahoma is located about 25 miles southeast of Tulsa. Coweta is home to the American Legion Post 226 that was founded in 1936. Still going strong after 87 years, this post is a big part of the Coweta community. Post 226 is heavily involved in many local festivals and activities, the members of the post donate time, supplies and money to local veterans, youth, as well as to the Coweta general community.
Spinach and Bacon Casserole
When I was younger the thought of anything with spinach made me cringe. All I could think of was my mom opening a can of spinach and warming it up to go with dinner. When I was older and one of my first jobs was in a little bakery that sold mini spinach and bacon quiche muffins and when I tasted it for the first time, I knew it wasn’t all that bad. In fact, it was quite tasty and would have one every shift I worked. Then I discovered spinach artichoke cheese dip and oh my it was my addiction. There were a few restaurants in town that had the best spinach artichoke dip, but they wouldn’t give me the recipe. So, I set out to duplicate their recipe and came very close to it and it became one of my family’s favorites.

This Carrot Cake is so easy and so good. Carrot Cake is one of those desserts that you love to hate. It tastes great, you can’t get enough, and you dig in and try to forget about the calories. Carrot cake is rumored to have originated in England in the early 1500’s most likely was called “pudding in a Carret Root.” In Switzerland it is found to be a very popular cake especially for children’s birthdays. Carrot cake has evolved to be one of the most popular desserts ever and although there are several variations of carrot cake, one thing that is standard is that It has carrots, and it covered with delicious cream cheese icing.

Possum Pie
When I heard someone say that they would love to have some Possum Pie, I thought "Whoa, is this some kind of Beverly Hillbilly joke?" I had to find out about more and when I googled Possum Pie, it gave me several recipes. Some recipes have pineapple, some use almonds or walnuts, most use pecans. After some more research, I found that Possum Pie originated in Arkansas in the 1970's and is called Arkansas Possum Pie. What I have made is what I believe to be the traditional recipe, a layered icebox pie with a graham cracker crust, a cheesecake layer, then nuts, pudding, and topped with whipped cream and more nuts.

Cooking for two is sometimes challenging and takes organization. It seems that most recipes are for families, we are empty nesters. After searching cookbooks and experimenting with a few recipes I came up with a few recipes for 2 people and I am working on more. Check out my article Cooking for 2 Bacon and Cheese Baked Macaroni. My husband loves biscuits, the canned ones are ok but nothing like homemade. This is the recipe I came up with and my husband said this is it no more canned biscuits. The recipe is so easy and can be doubled for extras or frozen.
