    Dallas company making cheese the old-fashioned way

    Dallas, TX (KDAF) – There’s a spot in Dallas that still makes cheese the old-fashioned way, by hand.

    It all started when Paula Lambert fell in love with fresh mozzarella in Italy. She spent so much time there making sure she made her cheese the authentic way before she was ready to open her shop in 1982. Since then, the company has grown. They now make more than 100,000 pounds of cheese per year, but they still make it by hand, following centuries old recipes.

    They offer 40 different products. Some of their best sellers are Ancho Chile Caciotta – which is the Texas version of Monterey Jack, Rosemary Formaggio, Goat Round, and of course Mozzarella.

    Mozzarella Company also offers cheese-making classes and other events! In their classes you get a tour of the shop, learn about the history of the company, and then get to make multiple types of cheese! At the end there’s a cheese tasting party with wine and you get to take home the cheeses you made. Another event they offer is the wine and cheese pairing class.
