    -Reinspection #2 conducted. One-door stainless cold holder is still producing temperatures above 41.0F with an ambient temperature of 45.0F and an internal food temperature of 46.0F. A third reinspection is to be conducted to recheck unit. By the third reinspection, unit should be running at or below 41.0F or the unit is to be removed from facility. If violation is cited at third reinspection, a risk control plan will be implemented on the facility. Third reinspection is currently scheduled for 9/10/24 to recheck unit.

    Observed potato wedges at 133F, and chicken strips at 127F. Bulb over these items was out in hot case. Person in charge(PIC) will put in a ticket to have shatterproof bulb replaced. Discussed putting foods on time as a control or moving them to a different area of hot case until bulb is fixed. PIC moved items to different area of hot case with working bulb. Items out of temperature will be discarded at the end of 4 hours. Reinspection required to verify hot holding has been corrected.

    Observed: Multiple boxes of food stored on floor of walk-in cooler. Manager notified and product was promptly placed on walk-in cooler shelves. Corrected on site.

    Observed: Dead flies found on hand sink and on top of dish washer. Areas are to be cleaned and sanitized and fly carcasses are to be removed. Education provided and recommended fly sticky traps being placed in areas not above food or food contact surfaces.

    Observed: Cutting boards found with scratches and scoring. Cutting boards are to be resurfaced or replaced.
