    Cafe Rio Fresh Modern Mexican to Open in Southwestern Vegas

    Founded in 1997 in St. George, Utah , Cafe Rio Fresh Modern Mexican has grown to include more than 150 locations, and it’s now preparing to open another restaurant in Las Vegas. Licensing paperwork submitted recently to Clark County by Cafe Rio, Inc. shows a new Cafe Rio opening at 5235 South Ft. Apache Rd .

    “A lovely couple named Steve and Patricia Stanley started a restaurant called Cafe Rio Mexican Grill,” brand’s website’s About page tells the story of the restaurant’s origin. “Cafe Rio served authentic dishes derived from inspired recipes and traditional cooking of Northern Mexico’s Rio Grande region, Southern Texas, and New Mexico. Central to every bite was the belief that every ingredient must be fresh and made fresh to order.”

    The Cafe Rio menu includes bowls like the Sweet Pork First Timers ( Signature Sweet Pork Barbacoa, Cilantro-lime Rice, Black Beans, Roasted Tomatillo Sauce (mild), Pico de Gallo, Cheddar and Jack Shredded Cheese, Cotija Cheese, Chile Lime Tortilla Strips, Cilantro, Lime Wedge and our House Creamy Tomatillo Dressing ), and entrees like Burritos, Salads, Tostadas, Tacos, Enchiladas and more. These are served with proteins like Pollo Asado, Sweet Pork Barbacoa, Shredded Chicken Breast, and Fire-Grilled Steak.

    Located near Abode Red Rock Apartments , the new Cafe Rio will join nearby restaurants like Veggy Street , Del Taco , El Pollo Loco , and Brooklyn’s Best Pizza & Pasta .
