    National chain known for chicken fingers eyes location on this bustling Lexington road

    A restaurant that has for decades been known for its chicken fingers has eyes on a new spot in the Midlands.

    Guthrie’s Chicken, which has locations across the nation, particularly in the South, is being planned for 2404 Mineral Springs Road in Lexington, according to town of Lexington planning and zoning documents in May and June . The Mineral Springs address is directly adjacent to busy Sunset Boulevard in Lexington. A 14 Carrot Whole Foods store is across Sunset Boulevard from the site, and it’s less than a mile west from Lexington’s Target shopping center.

    The Lexington town planning documents list Guthrie’s as “under construction.” The land at the site was being cleared when a reporter rode by Monday morning. Chapin Commercial Construction is working on the project, per a post on the construction company’s Facebook page.

    Guthrie’s was founded in Alabama in 1965, according to the company’s website. It currently has locations across the U.S., including spots in Alabama, Kentucky, Arkansas, Tennessee, Mississippi and elsewhere, per a store locator tool on its website.

    The restaurant’s menu includes chicken fingers, a special dipping sauce, fries, coleslaw, Texas toast, sweet iced tea and more.

    The area where Guthrie’s is planned in Lexington is a high-traffic corridor. More than 40,000 cars per day travel down Sunset Boulevard nearby, according to state Department of Transportation statistics, while nearly 11,000 cars per day travel down Mineral Springs Road.
