Lately I've been experimenting with key lime pie recipes and this has to be the easiest one I've come across. All you need is a container of Cool Whip, lime juice, a can of sweetened condensed milk and a premade graham cracker crust.

The pie only takes about 10 minutes to make and is easy on the wallet. The Cool Whip, limes, condensed milk and graham cracker crust cost less than 2 dollars each in most areas. If you want to cut costs even more, you can substitute regular limes for the key limes (which I did--they're about 1/3 of the price and much easier to find). Or use bottled lime juice instead.

Though this recipe is simple and budget friendly, it's the taste I like best. The pie is light yet tangy and refreshing. On a hot day, its cool, creamy texture will make the heat seem a little more bearable.

    Whipped Key Lime Pie

    Ingredients

1 can (14 ounces) sweetened condensed milk

1 teaspoon key lime zest or lime zest

½ cup key lime juice or lime juice

1 8-ounce container thawed Cool Whip

1 9-inch premade graham cracker crust

Finely shredded key lime or lime zest (optional)

More whipped cream for topping (optional)

    Instructions

    1. Combine the sweetened condensed milk, lime juice and lime zest in a medium-sized bowl.
    2. Fold the Cool Whip into the lime filling and mix until fully combined.
    3. Spoon the filling into the premade crust and freeze for at least 2 hours.
    4. Remove the pie from the freezer and let it thaw for about 20 minutes before serving. Decorate with lime peel (optional) and top with more Cool Whip (optional).

    Notes

You can substitute 1 cup of heavy cream for the Cool Whip. Mix with an electric mixer on medium speed until it forms soft peaks then fold into the lime mixture. If you buy a pint, you can use the remaining cup to top the pie.
