    These Easy 2-Ingredient Cream Biscuits Are Light, Flaky and Crisp

    These 2-ingredient biscuits are golden brown and crispy on the outside with a light, fluffy interior. They're also quick and easy to make. You only need self-rising flour, heavy whipping cream and about 30 minutes.

    Like all biscuits, these are incredibly versatile: use them to make breakfast sandwiches or as a side dish with dinner. Or slather them with jelly for a delicious afternoon snack.

    While I love biscuits made with chilled butter, this recipe takes less time because you don't need to slice the butter into chunks then cut it into the dry ingredients. You can also skip the buttermilk traditional recipes call for. The high fat percentage in the heavy cream eliminates the need for butter and its liquid content stands in for the buttermilk.

    The key to getting cream biscuits right is not overmixing the dough. It should be moist and lumpy after you combine the flour and heavy cream, not smooth. The kneading should be minimal as well. The less you handle the dough, the lighter and fluffier your biscuits will be.

    Don't have time to roll out the dough? Use an ice-cream scoop to make drop biscuits instead.

    2-Ingredient Cream Biscuits

    Ingredients

    2 cups self-rising flour

    1½ cups heavy whipping cream

    Instructions

    1. Preheat oven to 500 degrees. Line a cookie sheet with parchment paper or lightly grease it.

    2. Add the flour to a large bowl and gradually stir in the heavy whipping cream, adding enough to moisten the flour to a sticky dough.

    3. Place the dough on a surface lightly covered with self-rising flour.

    4. Gently pat, knead, and roll the dough until it's about 1/2 an inch thick. Dust the top of the dough with flour and fold over.

    5. Pat or roll the dough again until it is 1/2 an inch thick and forms a square that's about 7 inches wide.

    6. Cut the dough with a 2-inch biscuit cutter. Reshape to cut as needed.

    7. Place biscuits on the baking sheet, brush with heavy cream and bake until golden brown, about 10-12 minutes.

    Makes 12 biscuits

    Notes

    Be sure your oven is fully preheated to 500 degrees. The high temperature makes the biscuits rise more.

    If you don't have self-rising flour on hand you can make it yourself. Combine 1 cup all-purpose flour, 1 1/2 teaspoons baking powder and 1/4 teaspoon salt. Be sure baking powder is not expired or old.

    For more savory biscuits, mix in herbs and grated cheese.

    For sweeter biscuits, add 2 tablespoons of granulated sugar.

    For more textured biscuits, add chocolate chips, butterscotch chips or chopped pecans.
