    No-Bake 5-Ingredient Chocolate Truffle Pie Is Irresistibly Delicious

    If you like chocolate, you'll love this rich chocolate truffle pie. It's another recipe that uses only five ingredients: chocolate chips, heavy whipping cream, vanilla extract, powdered sugar and a premade chocolate crust.

    This is a perfect summer pie for get-togethers, potlucks and dinner parties, but it also works as an everyday dessert. It doesn't take long to make and it's easy to pull together. The only hard part is waiting for the pie to set in the refrigerator. The pie really does taste like the inside of a chocolate truffle: it's rich, silky smooth and has a dense but creamy consistency. Top each slice with a dollop whipped cream or add some chocolate shavings to dress the pie up.

    You can make your own chocolate cookie or graham cracker crust for this recipe but I love the premade shell because it saves time.

    Chocolate Truffle Pie

    Ingredients

    1 12-ounce package semi-sweet chocolate chips

    1 1/2 cups heavy whipping cream, divided

    1/4 cup powdered sugar

    1 tablespoon vanilla extract

    1 premade 9-inch chocolate cookie crumb crust

    Instructions

    1. Combine chocolate chips and 1/2 of the cream in a microwave-safe dish. Cook on high for 1 to 2 minutes, stirring every 30 seconds until smooth. Cool to room temperature. Add sugar and vanilla and stir until smooth.

    2. Using a hand-held or stand mixer with a whisk attachment, beat the remaining cream in a bowl until soft peaks form. Add in the chocolate mixture, 1/3 at a time, and beat on high speed until combined.

    3. Spoon the filling into the crust and refrigerate for 8 hours. Top with whipped cream (optional).

    Notes

    You can make the chocolate base using the stove instead of using the microwave. Heat the heavy cream over a burner to a simmer (until little bubbles form around the edges) then pour it into a large heat-proof bowl filled with the chocolate chips. Cover the bowl for several minutes with plastic wrap then use a whisk to stir until the mixture melts into a lovely chocolate ganache. Stir in the vanilla and powdered sugar.

    Be sure to let the melted chocolate mixture cool before you add it to the whipped cream to keep the consistency like the interior of a truffle.

    If you want a lighter consistency, beat the whipped cream to stiff peaks and fold in the chocolate by hand. Cut down the chocolate by a couple of ounces and increase the amount of whipped cream.

    To enhance chocolate flavor, add a teaspoon of instant coffee to the melted chocolate mixture.
